Café de Paris Blanc de Blancs is made from 6 white grape varieties: Sauvignon, Ugni-Blanc, Semillion, Chardonnay, Chenin and Colombard. The grapes are harvested during the "vendanges", between the month of: September and October, in various regions of France.
Pressed, the wine undergoes an initial natural fermentation. After selection, the different "crus" are blended before a second maturing. Once filtered, the wine is bottled. The overall time from grape harvesting to bottling is less than a year.
